Background:
Milk protein-enriched iron fortified Bajra biscuit” is prepared by using a composite of Bajra (pearl millet) flour, wheat flour, shortening, dairy ingredients (rich in milk proteins) and fortified with suitable iron salt. Application of dairy ingredients assists in substitution of wheat flour with pearl millet flour to the maximum extent:
